Ingredients

2 tablespoons sesame oil
2 chicken breasts cut into strips
1 brown onion cut into thin wedges
2 tsp garlic paste
1 teaspoon ground turmeric
2 tablespoons red curry paste
1 lemongrass stem, trimmed thinly sliced
1 small red chilli, deseeded, thinly sliced
400ml can coconut milk
1 cup coriander leaves
1/2 lime, juiced
steamed basmati rice, coriander sprigs and lime wedges to serve

This video was great and easy to follow! I substituted minced garlic for garlic paste, left out the lemongrass since it was already an ingredient in the paste and left out the? lemons. Turned out great.

@GorgussGirl I haven't tried the curry, YET, I actually have my own recipe. but I make my rice with the butter a lot because my family LOVES it that way. Other than that, I? have my rice plain... because I'm asian. But I was just throwing the tip out there for you. Did you try his recipe?

Try not to pour? in all the coconut milk at one go. Leave some to pour in at the end after everything's cooked. The flavor would be much much much better (:

@GorgussGirl His rice looks real sticky but the butter really does wonders for rice! Just add it AFTER the rice is fully cooked? and be careful about how much water you use to cook your rice.

Just finished ...
Just finished eating this curry, word to word according to the recipe apart from the butter in rice.... Amazing! No salt or pepper and it all still holds the meat together! Would say it is a summery main dish, definitely, lightweight though makes you feel fed. Do not use too much lemongrass as it will takeover the? flavour. Overall, interesting flavour. Will do again during the summer. Thanks Nicko!xxx
